Inspiration from the fish and chips resulted in another home cooked meal. This time, we cooked dinner for not only the two of us, but for my parents as well. My dad loves crab cakes so I knew that would make for the perfect appetizer. As for the main course, we stuck to fish tacos. The crab cakes consisted of crab, egg, breadcrumbs, salt, pepper, garlic and onion. We then coated them in panko breadcrumbs and pan fried them. As for the fish, they were also tossed in panko and began cooking briefly in the pan and then into the oven to finish. On the side we made our own guacamole, salad, and had the usual toppings such as chopped tomato, lettuce, shredded cheese, sour cream. It was a tasty meal shared with great family, and I’m sure my mom appreciated the night off from cooking!
For dessert, we made spring rolls. Although the picture does not do justice, they were a hit! Some were filled with peanut butter and chocolate, some just with chocolate, and others were apple cinnamon.
